High Protein Pepperoni Pizza Rolls

1 cup whole wheat flour

1/2 cup whey protein isolate (unflavored)

1 tsp baking powder

1/2 tsp sea salt

1/2 tsp garlic powder

1/4 cup Greek yogurt (plain, unsweetened)

1/4 cup water (adjust as needed)

1/2 cup shredded low-fat mozzarella cheese

1/2 cup turkey pepperoni slices (or your preferred brand)

1/4 cup marinara sauce (for dipping)

1 tsp Italian seasoning

Olive oil spray

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

    Mix Dry Ingredients: In a large bowl, combine the whole wheat flour, whey protein isolate, baking powder, sea salt, garlic powder, and Italian seasoning. Whisk together until well combined.

      Add Wet Ingredients: Add the Greek yogurt and water to the dry ingredients. Stir until a dough begins to form. If the mixture is too dry, add a little more water; it should come together but not be too sticky.

        Knead the Dough: Lightly flour your countertop and turn out the dough. Knead for about 1 minute until smooth.

          Roll Out the Dough: Using a rolling pin, roll the dough into a rectangle about 1/4 inch thick. Aim for a sheet that's roughly 10x12 inches.

            Add Fillings: Evenly sprinkle the shredded mozzarella cheese and turkey pepperoni slices over the rolled-out dough.

              Roll the Dough: Starting from one of the longer sides, carefully roll the dough into a tight log. Pinch the ends to ensure the ingredients are sealed inside.

                Slice the Rolls: Using a sharp knife, cut the log into 1-2 inch pieces to create your pizza rolls. Place them cut side up on the prepared baking sheet.

                  Spray and Bake: Lightly spray the tops of the rolls with olive oil for a golden crust. Bake in the preheated oven for about 15-20 minutes or until they are golden brown and cooked through.

                    Serve: Allow to cool slightly, then serve warm with marinara sauce on the side for dipping.
