1 pound ground beef (or turkey for a leaner option)

1 medium onion, diced

2 cloves garlic, minced

2 cups frozen mixed vegetables (peas, carrots, corn)

1 can (15 oz) diced tomatoes with juice

1 can (15 oz) kidney beans or black beans, drained and rinsed

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

4 cups shredded potatoes (frozen or fresh)

2 cups shredded cheddar cheese

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with cooking spray or a light drizzle of olive oil.

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey) along with the diced onion. Cook until the meat is browned and the onion is tender, about 5-7 minutes. Make sure to crumble the meat as it cooks.

      Add Garlic and Veggies: Stir in the minced garlic, frozen mixed vegetables, and continue to cook for another 2-3 minutes until the garlic is fragrant.

        Combine Ingredients: In the skillet, add the diced tomatoes with their juice, drained beans, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper. Mix well to combine all the flavors, and let simmer for 5 more minutes on low heat.

          Layer in the Dish: Pour the meat and vegetable mixture into the prepared baking dish, spreading it evenly.

            Top with Potatoes: Carefully layer the shredded potatoes over the meat mixture, spreading them out evenly to cover the entire surface.

              Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the potatoes.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
