Homemade Chicken Parmesan Sliders

1 lb boneless, skinless chicken breasts

1 cup breadcrumbs (Italian seasoned preferred)

1/2 cup all-purpose flour

2 large eggs

1/4 cup grated Parmesan cheese

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

12 slider buns

2 cups marinara sauce (store-bought or homemade)

2 cups shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Olive oil for frying

Prepare the Chicken: Preheat your oven to 350°F (175°C). Slice the chicken breasts in half horizontally to create thinner cutlets. Season them with salt, pepper, garlic powder, and onion powder.

    Set Up Breading Station: In one bowl, place the flour. In the second bowl, beat the eggs. In a third bowl, combine breadcrumbs and grated Parmesan cheese.

      Coat the Chicken: Dip each chicken cutlet first in the flour, shaking off excess, then into the egg, and finally coat with the breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere well.

        Fry the Chicken: In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken cutlets in batches, frying until golden brown on each side (about 3-4 minutes per side). Transfer the cooked chicken to a paper towel-lined plate to drain excess oil.

          Assemble the Sliders: Cut the slider buns in half. On the bottom half of each bun, spread a spoonful of marinara sauce followed by a piece of the fried chicken. Top each chicken piece with a generous amount of shredded mozzarella cheese.
