For the Pastry:

2 ½ cups all-purpose flour

1 tsp salt

1 tbsp granulated sugar

1 cup unsalted butter, chilled and diced

6-8 tbsp cold water

For the Strawberry Filling:

1 cup fresh strawberries, hulled and chopped

½ cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch

2 tbsp water

For the Glaze:

1 cup powdered sugar

2-3 tbsp milk

1 tsp vanilla extract

Sprinkles (optional, for decoration)

Instructions
 

Make the Pastry Dough:

    - In a large mixing bowl, combine flour, salt, and sugar. Add the chilled, diced butter.

      - Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

        - Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. You may need 6 to 8 tablespoons.

          Chill the Dough:

            - Divide the dough into two equal parts, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

              Prepare the Strawberry Filling:

                - In a small saucepan over medium heat, combine chopped strawberries, sugar, lemon juice, cornstarch, and water.

                  - Cook for about 5-7 minutes, stirring occasionally, until the mixture thickens. Remove from heat and let it cool.

                    Roll Out the Dough:

                      - Preheat your oven to 375°F (190°C).

                        - On a floured surface, roll out one disk of dough to about ¼ inch thick. Cut it into 4 rectangles (approximately 3x5 inches each).

                          - Repeat with the second disk of dough.

                            Assemble the Pop Tarts:

                              - Place 4 of the rectangles on a baking sheet lined with parchment paper. Spoon a tablespoon of the cooled strawberry filling onto each rectangle, leaving a border.

                                - Using the remaining rectangles, place them on top of the filled rectangles and seal the edges with a fork. Poke a few small holes in the tops for steam to escape.

                                  Bake the Pop Tarts:

                                    - Bake in the oven for 20-25 minutes, or until golden brown. Let them cool on a wire rack.

                                      Prepare the Glaze:

                                        - In a medium bowl, mix powdered sugar, milk, and vanilla extract until smooth. Adjust consistency by adding more milk or powdered sugar as needed.

                                          Glaze and Serve:
