Ingredients
  

8 oz (about 2 cups) pasta (rotini, penne, or fusilli work well)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/2 cup feta cheese, crumbled (optional)

Salt and pepper to taste

For the Honey Dijon Dressing:

3 tablespoons Dijon mustard

2 tablespoons honey

1/4 cup olive oil

2 tablespoons apple cider vinegar

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Place them in a large mixing bowl alongside the fresh parsley.

      Make the Dressing: In a small bowl, whisk together the Dijon mustard, honey, olive oil, apple cider vinegar, salt, and pepper until well combined. Adjust the seasoning to taste.

        Combine Ingredients: Add the cooked and cooled pasta to the bowl with the vegetables. Pour the dressing over the pasta and veggies, then toss gently to combine. Ensure all ingredients are well coated with the dressing.

          Add Feta: If using, gently fold in the crumbled feta cheese for a creamy texture and extra flavor.

            Chill: Cover the pasta salad with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
