Ingredients

6 bone-in, skin-on chicken thighs

1/4 cup honey

1/4 cup fresh lemon juice

2 tablespoons soy sauce

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Lemon slices and fresh herbs (parsley or cilantro) for garnish

Instructions

Prepare Marinade: In a medium bowl, whisk together honey, lemon juice, soy sauce, olive oil, minced garlic, grated ginger, dried thyme, smoked paprika, salt, and pepper until combined.

Marinate Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Preheat Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using a charcoal grill, prepare a two-zone fire.

Grill Chicken: Remove the chicken thighs from the marinade, allowing the excess to drip off. Discard the remaining marinade. Place the chicken thighs skin-side down on the preheated grill. Grill for about 6-7 minutes until the skin is crispy and browned.

Flip and Cook: Flip the chicken thighs over and continue grilling for an additional 6-8 minutes until the internal temperature reaches 165°F and the meat is thoroughly cooked.

Rest and Serve: Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving. This allows the juices to redistribute. Garnish with fresh lemon slices and herbs before serving.

Enjoy: Serve the honey lemon grilled chicken thighs with a side of grilled vegetables, a fresh salad, or over rice for a complete meal.
