Honey Lime Chicken Fajitas

1 lb (450 g) boneless, skinless chicken breasts, sliced into thin strips

1 large red bell pepper, sliced into strips

1 large green bell pepper, sliced into strips

1 medium onion, thinly sliced (preferably red or yellow)

3 tablespoons honey

2 tablespoons lime juice (freshly squeezed)

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Corn or flour tortillas (for serving)

Optional toppings: avocado slices, sour cream, shredded cheese, salsa

Instructions
 

Marinate the Chicken: In a large bowl, combine honey, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Add the sliced chicken to the marinade, ensuring it's evenly coated. Cover the bowl and let it marinate in the fridge for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare Vegetables: While the chicken is marinating, slice the bell peppers and onion. Set aside.

      Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Cook for about 5-7 minutes, or until the chicken is golden brown and fully cooked through. Use a meat thermometer to check for a safe internal temperature of 165°F (75°C).

        Sauté the Vegetables: Add the sliced onion and bell peppers to the skillet with the chicken. Pour in the reserved marinade and stir to combine. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crunchy.

          Warm the Tortillas: While the chicken and vegetables are cooking, warm the tortillas in a dry skillet or microwave for about 30 seconds until soft and pliable.

            Assemble Fajitas: To serve, place a portion of the honey lime chicken and vegetable mix onto the warmed tortillas. Top with fresh cilantro and any other optional toppings you wish.
