1 lb ground beef (or ground chicken/turkey)

1/2 cup breadcrumbs (panko preferred)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon soy sauce

1 tablespoon gochujang (Korean chili paste)

1 tablespoon sesame oil

1 teaspoon sugar

1/2 teaspoon black pepper

1/4 cup cilantro, chopped (optional)

For the BBQ Glaze:

1/4 cup soy sauce

1/4 cup honey

1 tablespoon rice vinegar

1 tablespoon gochujang

1 teaspoon sesame oil

1 tablespoon sesame seeds, for garnish

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, green onions, garlic, ginger, soy sauce, gochujang, sesame oil, sugar, black pepper, and cilantro (if using). Mix together until well distributed but do not overmix.

    Form the Meatballs: Using your hands, roll the meat mixture into 1-inch meatballs, placing them on a parchment-lined baking sheet. You should have about 20 meatballs.

      Bake the Meatballs: Preheat your oven to 400°F (200°C). Bake the meatballs in the preheated oven for 15-20 minutes, or until they reach an internal temperature of 160°F (70°C) and are nicely browned.

        Prepare the BBQ Glaze: While the meatballs are baking, combine the soy sauce, honey, rice vinegar, gochujang, and sesame oil in a small saucepan. Bring to a gentle simmer over medium heat and cook for about 5 minutes, stirring occasionally until slightly thickened.

          Glaze the Meatballs: Once the meatballs are done baking, remove them from the oven. Carefully toss the meatballs in the BBQ glaze until evenly coated.

            Serve: Transfer the glossy meatballs to a serving platter, and sprinkle with sesame seeds and additional chopped green onions for garnish. Serve with toothpicks for easy eating, and pair with steamed rice or lettuce wraps for a complete meal.
