Ingredients

2 cups cooked chicken breast, shredded or diced

1 cup romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1/4 cup pepperoncini, sliced

1/4 cup black olives, pitted and sliced

1/4 cup provolone cheese, diced

1/4 cup Italian dressing (homemade or store-bought)

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Crusty bread or hoagie rolls (optional, for serving)

Instructions

Prepare the Chicken: If you don't have cooked chicken on hand, you can poach chicken breasts in boiling water for about 15-20 minutes until fully cooked. Let it cool before shredding or dicing.

Mix the Base: In a large mixing bowl, combine the shredded chicken, chopped romaine lettuce, halved cherry tomatoes, sliced red onion, pepperoncini, black olives, and diced provolone cheese. Toss gently to combine.

Make the Dressing: In a small bowl, whisk together the Italian dressing, dried oregano, garlic powder, crushed red pepper flakes (if using), and a pinch of salt and pepper.

Combine: Pour the dressing over the salad mixture. Toss thoroughly to ensure everything is evenly coated in the dressing.

Taste & Adjust: Taste the salad and adjust seasoning with more salt, pepper, or dressing as needed.

Garnish & Serve: Transfer the salad to a serving bowl. Garnish with fresh chopped parsley. If desired, serve it with crusty bread or in hoagie rolls for a delightful sandwich option!

Chill (Optional): For the best flavor, let the salad sit in the refrigerator for about 30 minutes before serving so the flavors can meld together.
