Italian Sausage Stuffed Peppers

4 large bell peppers (any color)

1 pound Italian sausage (mild or spicy, casing removed)

1 cup cooked quinoa or rice

1 cup marinara sauce (plus extra for topping)

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley, for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly season the insides with salt and pepper. Set aside, cut-side up.

      Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Use a wooden spoon to break it apart as it cooks, about 5-7 minutes, until browned and no longer pink. Drain excess fat if necessary.

        Sauté Vegetables: Add diced onion and minced garlic to the skillet with the sausage. Sauté for another 3-4 minutes, or until the onion becomes translucent.

          Mix Filling Ingredients: Stir in the cooked quinoa or rice, marinara sauce, Italian seasoning, and red pepper flakes (if using). Cook for an additional 2-3 minutes until everything is well combined. Adjust seasoning with salt and pepper to taste.

            Stuff the Peppers: Carefully spoon the sausage mixture into the hollowed-out bell peppers, packing them gently but firmly. Place the stuffed peppers standing upright in a baking dish.

              Add Cheese: Spoon a little extra marinara sauce on top of each stuffed pepper. Sprinkle shredded mozzarella and Parmesan cheese over the tops.

                Bake the Peppers: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Remove the stuffed peppers from the oven. Allow them to cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.
