Ingredients

2 slices of sourdough or whole grain bread

1 ripe peach, thinly sliced

1 fresh jalapeño pepper, thinly sliced (seeds removed for less heat)

4 oz creamy brie or goat cheese

1 oz sharp cheddar cheese, grated

1 tablespoon honey (optional)

1 tablespoon butter

Salt and pepper, to taste

Instructions

Prepare Ingredients: Begin by washing the peach and jalapeño. Slice the peach into thin rounds and the jalapeño into thin rings. If you prefer less heat, carefully remove the seeds from the jalapeño slices.

Assemble Sandwich: On one slice of bread, spread a generous layer of brie or goat cheese. Top with a layer of peach slices, followed by jalapeño rings. If desired, drizzle a little honey over the jalapeños for added sweetness. Season with a sprinkle of salt and pepper. Add the sharp cheddar cheese on top for an extra flavor punch.

Close the Sandwich: Place the second slice of bread on top, pressing down lightly to secure the filling.

Grill: Heat a skillet over medium heat and add the butter. Once melted and bubbling, carefully place the sandwich into the skillet. Cook for about 3-4 minutes on one side until golden and crispy, then flip and cook for another 3-4 minutes on the other side, pressing slightly with a spatula.

Check for Doneness: Make sure both sides are golden brown and the cheese is melty. You can reduce the heat if the bread browns too quickly before the cheese melts.

Serve: Remove the sandwich from the skillet and let it cool for a minute. Cut it in half and enjoy warm!
