Jalapeño Popper Potato Casserole

4 large russet potatoes, peeled and diced

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup diced jalapeños (fresh or pickled, adjust to taste)

1/2 cup cooked bacon bits (optional)

1/2 cup green onions, chopped

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper, to taste

1/2 cup panko breadcrumbs

2 tbsp olive oil or melted butter, for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Potatoes: In a large pot, bring water to a boil. Add the diced potatoes and cook for about 10-12 minutes or until fork-tender. Drain and set aside.

      Make the Creamy Mixture: In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and creamy.

        Add Cheeses and Seasonings: Gradually stir in the shredded sharp cheddar cheese and Monterey Jack cheese to the creamy mixture. Then add the diced jalapeños, bacon bits, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated.

          Combine Potatoes: Fold in the cooked potatoes into the cheese mixture until evenly coated.

            Transfer to Baking Dish: Scoop the potato mixture into a greased 9x13-inch baking dish, spreading it evenly.

              Prepare Topping: In a small bowl, combine panko breadcrumbs with olive oil or melted butter. Sprinkle this mixture evenly over the casserole.
