1 cup breadcrumbs (panko for extra crunch)

1/4 cup finely chopped fresh parsley

1/4 cup grated parmesan cheese

1/4 cup finely chopped green onions

1 large egg

2 cloves garlic, minced

1 tsp ginger, grated

Salt and pepper to taste

For the Teriyaki Sauce:

1/2 cup soy sauce (low sodium preferred)

1/4 cup honey or brown sugar

1/4 cup rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp ginger, grated

1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

For the Pineapple Garnish:

1 cup fresh pineapple chunks (grilled or raw)

Sesame seeds for garnish

Additional chopped green onions for garnish

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, parsley, parmesan, green onions, egg, minced garlic, grated ginger, salt, and pepper. Mix until just combined—be careful not to overmix.

      Form Meatballs: Roll the mixture into meatballs, about 1 inch in diameter. Place the meatballs on the prepared baking sheet, evenly spaced.

        Bake Meatballs: Bake in the preheated oven for 15-20 minutes or until fully cooked through and golden brown.

          Prepare Teriyaki Sauce: While the meatballs are baking, in a medium saucepan over medium heat, combine soy sauce, honey (or brown sugar), rice vinegar, sesame oil, minced garlic, and grated ginger. Bring the mixture to a boil.
