1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

Zest from 2 key limes

2 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup sweetened shredded coconut

1 cup white chocolate chips

Optional: Extra sweetened shredded coconut for rolling

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream Butter and Sugars: In a large bowl, using a hand mixer or a stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

      Add Eggs and Flavorings: Beat in the eggs one at a time, ensuring each one is fully incorporated before adding the next. Mix in the vanilla extract, key lime juice, and key lime zest until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.

          Mix Dry into Wet: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

            Fold in Coconut and Chocolate Chips: Using a spatula, gently fold in the shredded coconut and white chocolate chips until evenly distributed throughout the dough.

              Scoop Cookies: Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart. For an extra touch, roll each ball of dough in sweetened shredded coconut.
