1 lb kielbasa, sliced into ½-inch pieces

2 cups baby potatoes, halved

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, cut into wedges

2 cups broccoli florets

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon black pepper

½ teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large mixing bowl, combine the baby potatoes, red bell pepper, yellow bell pepper, red onion, and broccoli florets. Add the minced garlic.

      Season the Veggies: Drizzle the olive oil over the veggies and sprinkle with smoked paprika, dried oregano, black pepper, and salt. Toss everything together until well coated.

        Arrange on Sheet Pan: Spread the seasoned veggies evenly on a large sheet pan. Add the sliced kielbasa on top, distributing it evenly among the veggies.

          Roast in the Oven: Place the sheet pan in the oven and roast for about 25-30 minutes, or until the veggies are tender and the kielbasa is browned, stirring halfway through for even cooking.
