Lazy Chicken Parmesan Grilled Cheese

2 slices of hearty Italian bread

1 cup cooked chicken, shredded (rotisserie chicken works great!)

1/2 cup marinara sauce

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

2 tablespoons unsalted butter

Fresh basil leaves (for garnish, optional)

Salt and pepper to taste

Prep the Chicken: In a bowl, combine the shredded chicken, marinara sauce, garlic powder, Italian seasoning, salt, and pepper. Mix until the chicken is well coated.

    Build the Sandwich: On one slice of bread, pile half of the shredded mozzarella cheese. Layer on the chicken mixture, followed by the rest of the mozzarella cheese, and then the second slice of bread.

      Butter the Bread: Spread one tablespoon of butter evenly on the top slice of the sandwich.

        Grill: Heat a skillet over medium heat. Once hot, place the sandwich butter-side down in the skillet. Cook for about 3-4 minutes until golden brown and crispy.

          Flip: Carefully flip the sandwich over using a spatula. Spread the remaining tablespoon of butter on the top slice. Cook for another 3-4 minutes until the other side is golden and the cheese is melted.

            Add Parmesan: Once the sandwich is flipped again, sprinkle the grated Parmesan cheese on top and cover the skillet with a lid for about 1 minute to melt the cheese.

              Serve: Remove the sandwich from the skillet and let it sit for a minute. Slice it in half and garnish with fresh basil leaves if desired. Serve warm with additional marinara on the side for dipping.
