1 lb canned salmon (drained and flaked)

1/2 cup breadcrumbs (or gluten-free alternative)

1/4 cup finely chopped red onion

1/4 cup fresh dill (chopped)

2 cloves garlic (minced)

1 large egg

2 tablespoons lemon juice (freshly squeezed)

Zest of one lemon

1 teaspoon Dijon mustard

Salt and pepper to taste

2 tablespoons olive oil (for frying)

Optional: Lettuce leaves and lemon wedges for serving

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped red onion, fresh dill, and minced garlic. Mix well until all ingredients are evenly distributed.

    In a separate small bowl, whisk together the egg, lemon juice, lemon zest, Dijon mustard, salt, and pepper.

      Pour the egg mixture into the salmon mixture. Stir until fully combined, ensuring the breadcrumbs are moistened.

        Shape the mixture into patties, about 2-3 inches wide and 1/2 inch thick. You should yield about 8 patties.

          Heat olive oil in a large skillet over medium heat. Once hot, carefully place the patties in the skillet (in batches if necessary, to avoid overcrowding).

            Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.

              Once cooked, transfer the patties to a paper towel-lined plate to absorb excess oil.

                Serve warm on a bed of lettuce leaves with fresh lemon wedges on the side, or as a sandwich with your favorite toppings. Enjoy your refreshing lemon dill salmon patties!
