Lemon Garlic Roasted Potatoes and Green Beans

1.5 lbs baby potatoes, halved

8 oz green beans, trimmed

4 cloves garlic, minced

2 tablespoons olive oil

1 lemon, zested and juiced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Veggies: In a large mixing bowl, combine the halved baby potatoes with half of the olive oil, half of the garlic, lemon zest, lemon juice, thyme, oregano, salt, and pepper. Toss to coat the potatoes evenly.

      Roast the Potatoes: Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20 minutes.

        Add Green Beans: While the potatoes are roasting, in the same mixing bowl, add the trimmed green beans, remaining olive oil, garlic, salt, and pepper. Toss to coat the green beans well.

          Combine & Roast More: After the potatoes have been in the oven for 20 minutes, remove the baking sheet and add the green beans to the same sheet with the potatoes. Give everything a gentle toss to mix.

            Continue Roasting: Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are golden brown and tender, and the green beans are crisp-tender.

              Final Touches: Once out of the oven, taste and adjust seasoning if needed. Garnish with fresh parsley and serve with lemon wedges on the side for an extra zing.
