Lemon Honey Glazed Chicken

4 chicken thighs (bone-in, skin-on for extra flavor)

1/4 cup honey

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

3 cloves garlic, minced

1 tablespoon fresh rosemary, minced (or 1 teaspoon dried rosemary)

1 tablespoon soy sauce

Salt and pepper, to taste

2 tablespoons olive oil

Lemon slices, for garnish

Fresh rosemary sprigs, for garnish

Instructions
 

Marinate the Chicken: In a bowl, whisk together honey, lemon juice, lemon zest, minced garlic, rosemary, soy sauce, salt, and pepper. Add the chicken thighs and coat thoroughly. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Preheat the Oven: When ready to cook, preheat your oven to 400°F (200°C).

      Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade for later use. Season both sides of the chicken thighs with additional salt and pepper. Place the thighs skin-side down in the hot skillet and sear for about 5-7 minutes until the skin is golden brown.
