1 cup all-purpose flour

2 tablespoons poppy seeds

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon lemon juice added)

1 large egg

2 tablespoons unsalted butter, melted

Zest of 1 lemon

2 tablespoons fresh lemon juice

Optional: maple syrup and fresh berries for serving

Mix Dry Ingredients: In a large bowl, whisk together the flour, poppy seeds, sugar, baking powder, and salt until well combined.

    Combine Wet Ingredients: In a separate bowl, mix the buttermilk, egg, melted butter, lemon zest, and fresh lemon juice until blended.
