1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 cup dried green or brown lentils, rinsed and drained

6 cups vegetable broth (or water)

1 bay leaf

2 cups fresh spinach, roughly chopped

Juice of 1 lemon (about 3 tablespoons)

Salt and black pepper to taste

Optional: Fresh parsley or dill for garnish

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic, carrots, and celery and continue to sauté for another 5-7 minutes until the vegetables soften.
