Light Citrus Quinoa Salad

Ingredients
  

1 cup quinoa, rinsed

2 cups water or vegetable broth

1 medium orange, zested and segmented

1 medium grapefruit, zested and segmented

1 cup chopped cucumber

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh mint leaves, chopped

1/4 cup fresh parsley, chopped

3 tablespoons olive oil

2 tablespoons fresh lemon juice

Salt and pepper to taste

Optional: sliced avocado for topping

Instructions
 

In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth) and bring it to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the quinoa is fluffy and all the liquid is absorbed.

      Remove the quinoa from heat and let it sit, covered, for another 5 minutes. Then, fluff it with a fork and allow it to cool.

        In a large bowl, combine the cooled quinoa, orange segments, grapefruit segments, chopped cucumber, halved cherry tomatoes, red onion, mint, and parsley.

          In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until emulsified.

            Drizzle the dressing over the quinoa salad and toss gently to combine all ingredients. Adjust seasoning to taste.

              Let the salad sit for at least 15 minutes to allow flavors to meld. Serve chilled or at room temperature, topped with sliced avocado if desired.
