Ingredients
  

4 large russet potatoes

2 cups fresh broccoli florets

1 cup sharp cheddar cheese, grated

½ cup cream cheese, softened

¼ cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

¼ cup green onions, chopped (for garnish)

2 tablespoons bacon bits (optional, for extra flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Potatoes:

      - Wash and scrub the russet potatoes under cold water. Pat them dry with a towel.

        - Pierce each potato several times with a fork to allow steam to escape.

          - Rub the potatoes with olive oil and sprinkle with salt.

            Bake Potatoes: Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender and a fork easily pierces through.

              Prepare the Broccoli:

                - While the potatoes are baking, bring a medium pot of salted water to a boil.

                  - Blanch the broccoli florets by boiling them for about 2-3 minutes until they are bright green and tender-crisp. Drain and rinse under cold water to stop the cooking process.

                    Make the Filling:

                      - In a large bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until smooth.

                        - Fold in the blanched broccoli florets and half of the cheddar cheese (½ cup).

                          Stuff the Potatoes:

                            - Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out a bit of the flesh into the mixing bowl with the cheese and broccoli filling.

                              - Mix it well, then spoon the creamy broccoli mixture back into each potato half.

                                Add Cheddar and Bake:

                                  - Top each stuffed potato with the remaining cheddar cheese and, if using, sprinkle with bacon bits.

                                    - Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                                      Serve:
