1 lb ground beef (80/20 for flavor)

1 medium onion, diced

2 cloves garlic, minced

1 cup cauliflower rice (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

3 large eggs

1/2 cup heavy cream

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup sliced pickles (for topping)

Fresh chives or green onions, chopped (for garnish)

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish with cooking spray or butter.

    Cook the ground beef: In a large skillet over medium heat, add the ground beef. Cook for about 5 minutes, breaking it apart with a spatula until it starts to brown. Drain excess fat if necessary.

      Add aromatics: Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion becomes translucent.

        Incorporate cauliflower rice: Stir in the cauliflower rice and cook for another 3-5 minutes until everything is well combined and the cauliflower is tender. Season with smoked paprika, salt, and pepper to taste.

          Prepare the egg mixture: In a mixing bowl, whisk together the eggs, heavy cream, Dijon mustard, and Worcestershire sauce until well combined.

            Combine all ingredients: In a large bowl, mix the beef and cauliflower mixture with the egg mixture. Add the halved cherry tomatoes and half of both the shredded cheddar and mozzarella cheese. Stir until everything is evenly coated.

              Transfer to casserole dish: Pour the mixture into the prepared casserole dish and spread it evenly. Sprinkle the remaining cheddar and mozzarella cheese on top.

                Bake it: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden brown.
