4 boneless, skinless chicken breasts

1 cup fresh mango, diced

1 cup fresh pineapple, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and minced (optional for heat)

Juice of 2 limes

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: lime wedges for garnish

Marinate the Chicken: In a bowl, combine the olive oil, garlic powder, salt, and pepper. Coat the chicken breasts evenly with this mixture. Let them marinate for at least 30 minutes (or up to 2 hours for extra flavor) in the refrigerator.

    Prepare the Salsa: In a separate bowl, mix together the diced mango, diced pineapple, red onion, cilantro, jalapeño (if using), and lime juice. Stir gently to combine. Taste and adjust seasoning if needed. Set aside to let the flavors meld.

      Cook the Chicken: Preheat the grill or a skillet over medium-high heat. Remove the chicken from the marinade and grill or cook in the skillet for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink inside (internal temperature should reach 165°F/75°C).
