Ingredients

1 pound baby carrots (or regular carrots, peeled and cut into sticks)

2 tablespoons olive oil

2 tablespoons pure maple syrup

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper to taste

Optional: Chopped parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Carrots: If using regular carrots, wash, peel, and cut them into sticks about 4 inches long. Baby carrots can be used whole or cut in half lengthwise.

Make the Glaze: In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, garlic powder, thyme, salt, and pepper until well combined.

Toss the Carrots: Add the carrots to the bowl with the glaze and toss until they're evenly coated in the mixture.

Spread on Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the glazed carrots in a single layer on the baking sheet.

Roast the Carrots: Place the baking sheet in the preheated oven and roast for about 25-30 minutes or until the carrots are tender and slightly caramelized, stirring halfway through for even cooking.

Finish and Serve: Once the carrots are cooked, remove them from the oven. If desired, garnish with fresh chopped parsley for a pop of color and flavor. Serve warm.
