Ingredients

1 lb large carrots, peeled and cut into fry shapes

2 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)

Optional: 1 tablespoon sesame seeds for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will ensure a nice crispiness to the carrot fries.

Prepare the Carrots: Peel the carrots and cut them into fry shapes, about 1/4 inch thick. Thicker fries may require a longer cooking time, so try to keep them uniform.

Make the Glaze: In a large mixing bowl, combine the olive oil, maple syrup, ground cinnamon, salt, black pepper, and chopped rosemary. Whisk until well combined – this will be your delicious glaze!

Coat the Carrots: Add the carrot fries to the bowl with the maple glaze. Toss them well to ensure every fry is coated evenly in the sweet mixture.

Arrange on Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the coated carrot fries in a single layer, making sure they aren’t overcrowded, which helps them roast evenly.

Bake: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, flipping the fries halfway through cooking to ensure they are crispy on all sides. Keep an eye on them as baking times may vary based on your oven and the thickness of your fries.

Garnish and Serve: Once the carrot fries are golden and tender, remove them from the oven. If desired, sprinkle with sesame seeds for an extra crunch. Serve warm as a side dish or a healthy snack!
