4 ripe pears (Bartlett or Bosc), peeled, cored, and sliced

1 cup walnuts, chopped

1/2 cup maple syrup

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

Pinch of salt

For the crust:

1 1/2 cups all-purpose flour

1/2 cup unsalted butter, chilled and cut into small cubes

1/4 cup granulated sugar

1/4 teaspoon salt

1/4 cup ice water

For the topping:

1/4 cup oats

1/4 cup brown sugar

1/4 cup flour

1/4 cup cold unsalted butter, cubed

1 teaspoon cinnamon

1/2 cup walnuts, chopped

Instructions
 

Prepare the crust: In a large mixing bowl, combine flour, sugar, and salt. Add the chilled butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Flatten into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

    Preheat the oven: Preheat your oven to 375°F (190°C).

      Make the filling: In a large bowl, toss the sliced pears with lemon juice, maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Carefully fold in the chopped walnuts until well combined. Set aside.

        Roll out the crust: On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie pan. Carefully transfer the crust to the pan and trim any excess dough hanging over the edges.

          Add the filling: Pour the pear mixture into the prepared crust, spreading it evenly.

            Make the topping: In a small bowl, combine oats, brown sugar, flour, cinnamon, and chopped walnuts. Add the cold butter and mix until crumbly. Sprinkle this mixture evenly over the pear filling.

              Bake the pie: Bake the pie in the preheated oven for 45-50 minutes, or until the filling is bubbly and the topping is golden brown. You can cover the edges with foil if they brown too quickly.
