1 lb (450g) chicken breasts, thinly sliced

Salt and pepper, to taste

2 tbsp olive oil

4 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (100g) sun-dried tomatoes, chopped

1 cup (100g) grated Parmesan cheese

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

10 oz (280g) fettuccine or pasta of your choice

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Cook the Pasta: Begin by boiling a large pot of salted water. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, saving a cup of pasta water.

    Prepare the Chicken: Season the sliced chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for about 6-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and stir to combine. Add the chopped sun-dried tomatoes, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Let the sauce simmer for about 3-4 minutes, stirring occasionally until it thickens slightly.

        Combine Everything: Add the cooked chicken back into the skillet with the sauce. Toss in the drained pasta and mix well to coat. If the sauce is too thick, gradually add some reserved pasta water until it reaches your desired consistency.
