Ingredients
  

4 fillets of white fish (such as cod or halibut)

1 cup cherry tomatoes, halved

1 medium red onion, sliced

2 cloves garlic, minced

1 lemon, zested and sliced

1/4 cup Kalamata olives, pitted and sliced

1/4 cup capers, rinsed

2 tsp dried oregano

1 tsp smoked paprika

1/4 cup extra virgin olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: Lightly oil a baking dish with 1 tablespoon of olive oil.

      Combine Vegetables: In a large mixing bowl, combine the cherry tomatoes, red onion, minced garlic, Kalamata olives, capers, oregano, smoked paprika, lemon zest, salt, and pepper. Drizzle with 2 tablespoons of olive oil and toss well to coat the vegetables.

        Arrange Fish: Place the fish fillets in the prepared baking dish in a single layer. Season the fillets with salt and pepper, then top with the marinated vegetable mixture evenly distributed over the fish.

          Add Lemon Slices: Arrange the lemon slices on top of the vegetable-topped fish.

            Drizzle Olive Oil: Drizzle the remaining olive oil (about 1 tablespoon) over the fish and vegetables to keep them moist during baking.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.

                Garnish: Once baked, remove from the oven and garnish with fresh chopped parsley before serving.
