Mediterranean Couscous Salad

Ingredients
  

1 cup couscous

1 1/4 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

2 tablespoons olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a spicy kick

Cook the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Add the couscous, cover, and remove from heat. Let it sit for about 5 minutes, until the liquid is absorbed. Fluff the couscous with a fork and let it cool.

    Prepare the Vegetables: While the couscous is cooling, prepare the fresh vegetables. Dice the cucumber, red bell pepper, and onion; halve the cherry tomatoes; and slice the olives.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, pepper, and optional red pepper flakes if using.

        Combine Ingredients: In a large mixing bowl, combine the cooled couscous with the prepared vegetables, crumbled feta, parsley, and mint. Drizzle with the dressing and toss gently to combine.

          Chill (Optional): For the best flavor, cover the salad and let it chill in the refrigerator for at least 30 minutes before serving.
