Mini Baked Apple Pies

2 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/4 cup granulated sugar

1 tsp ground cinnamon

1/4 tsp nutmeg

1 tbsp lemon juice

1 tbsp unsalted butter, melted

1 package (14 oz) refrigerated pie crusts (or homemade if preferred)

1 egg (for egg wash)

1 tbsp milk (for egg wash)

Optional: Vanilla ice cream for serving

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare Apple Filling: In a mixing bowl, combine the diced apples, granulated sugar, cinnamon, nutmeg, lemon juice, and melted butter. Toss until the apples are coated evenly. Let sit for about 10 minutes to allow the flavors to meld.

      Prepare Pie Crusts: Roll out the refrigerated pie crusts on a lightly floured surface. Using a round cookie cutter or a cup, cut out circles (about 4-5 inches in diameter) from the dough. You should be able to get about 12 circles from one package.

        Assemble Pies: Place a tablespoon of the apple filling in the center of each dough circle. Be careful not to overfill. Fold the dough over to create a half-moon shape and press the edges together to seal. Crimp the edges with a fork for a decorative finish.

          Egg Wash: In a small bowl, whisk together the egg and milk. Brush the egg wash over the tops of the mini pies to give them a beautiful golden color when baked.

            Bake: Place the assembled mini pies on the prepared baking sheet. Bake in the preheated oven for about 20-25 minutes, or until the crust is golden brown and the filling is bubbling.

              Cool and Serve: Once baked, remove from the oven and let cool for a few minutes. Serve warm, optionally with a scoop of vanilla ice cream on the side.
