Mini Cherry Pie Bites

Ingredients
  

1 cup fresh or frozen cherries, pitted and halved

1/2 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 package (1 sheet) of refrigerated pie crust (or homemade)

1 egg, beaten (for egg wash)

Powdered sugar (for dusting)

Optional: whisked egg yolk and 1 tablespoon milk (for a richer egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Cherry Filling: In a medium bowl, combine the cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Gently toss until the cherries are well coated. Set aside for about 10 minutes to allow the juices to mix.

      Roll Out the Pie Crust: If using homemade pie crust, roll it out on a lightly floured surface until it's about 1/8-inch thick. If using store-bought, unroll the sheet.

        Cut the Dough: Using a round cookie cutter or a glass, cut out circles of dough measuring about 3 inches in diameter. You should get around 12-15 circles, depending on the thickness of your dough.

          Assemble the Pie Bites: From the cut circles, place half of them onto a baking sheet lined with parchment paper. Spoon a small tablespoon of the cherry filling into the center of each circle, being careful not to overfill.

            Create Lids: Take the remaining dough circles and cut a small slit or use a star-shaped cutter in the center for venting. Place one circle on top of each filled circle, and press the edges together with a fork to seal.

              Apply Egg Wash: Brush the tops of the mini pies with the beaten egg to give them a golden color when baked. For a richer color, mix in a tablespoon of milk with the egg wash.

                Bake the Bites: Bake in the preheated oven for 15-20 minutes or until the crust is golden brown.

                  Cool and Dust: Remove from the oven and let cool for a few minutes. Dust with powdered sugar before serving for an extra touch of sweetness.
