Mushroom Asiago Chicken

4 boneless, skinless chicken breasts

1 cup sliced mushrooms (cremini or button)

1 cup grated Asiago cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)

Salt and pepper, to taste

1/2 cup chicken broth

1/4 cup heavy cream

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

    Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Sauté the Mushrooms: In the same skillet, add the sliced mushrooms and cook for about 5 minutes until they are soft and begin to release their moisture. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Make the Sauce: Pour in the chicken broth and bring to a simmer, scraping any browned bits off the bottom of the skillet. Reduce the heat to medium-low and stir in the heavy cream. Let it simmer for about 3 minutes until slightly thickened.

          Add Cheese & Chicken: Sprinkle half of the grated Asiago cheese into the sauce, stirring to combine. Return the chicken breasts to the skillet, spooning some of the sauce over them. Top each chicken breast with the remaining Asiago cheese.

            Bake the Dish: Preheat your oven to 375°F (190°C). Cover the skillet with a lid or foil and transfer it to the oven. Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

              Serve: Remove from the oven and let it sit for a few minutes. Garnish with freshly chopped parsley and serve hot, accompanied by pasta, rice, or a side of vegetables.
