2 tablespoons sugar

1 tablespoon lemon juice

Instructions

Prepare the crust: In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are well-coated.

Layer the crust: Spoon about 2 tablespoons of the crust mixture into the bottom of each jar, pressing down lightly to form an even layer.

Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy. Add the powdered sugar and vanilla extract; continue beating until smooth.

Whip the cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

Layer the filling: Spoon the cheesecake filling on top of the crust in each jar, filling them about two-thirds full.

Prepare the berry topping: In a small bowl, combine the fresh mixed berries, sugar, and lemon juice. Gently toss to coat and let them macerate for about 10 minutes.

Add the berry topping: Spoon the macerated berries on top of the cheesecake layer in each jar.

Chill: Cover the jars with lids or plastic wrap and place them in the refrigerator. Let them chill for at least 3 hours, or overnight for best flavor.

Serve: When ready to serve, garnish with additional berries and a mint leaf on top for a fresh touch.
