No Bake Oreo Cheesecake

24 Oreo cookies (plus extra for garnish)

½ cup unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1 cup sour cream

Prepare the Crust: In a food processor, crush the 24 Oreo cookies until they resemble fine crumbs. In a separate bowl, combine the Oreo crumbs with melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

    Form the Base: Press the Oreo crumb mixture firmly into the bottom of a 9-inch springform pan, making sure it’s packed tightly and evenly. Use the back of a measuring cup or the flat surface of a glass to help with this. Place it in the refrigerator to set while you make the cheesecake filling.

      Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar, continuing to mix until well combined. Add the vanilla extract and salt, mixing again until fully incorporated.

        Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.

          Incorporate the Sour Cream: Add the sour cream to the mixture, folding it in until the filling is smooth and uniform in color.

            Combine and Chill: Pour the cheesecake filling over the prepared crust, spreading it evenly. Smooth the top with a spatula. Crumble a few additional Oreo cookies over the top for garnish if desired.

              Set the Cheesecake: Cover the springform pan with plastic wrap and refrigerate for at least 4 hours, but ideally overnight, to allow it to set properly.
