1 cup rolled oats

1 cup milk (dairy or plant-based)

1/2 cup brown sugar

1/4 cup honey or maple syrup

1/3 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour (or whole wheat flour for a healthier version)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon (optional)

1/2 cup chopped nuts (walnuts or pecans)

1/2 cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners or grease it lightly.

    Prepare the Oats: In a medium bowl, combine the rolled oats and milk. Let it sit for about 15-20 minutes to allow the oats to absorb the milk and soften.

      Mix Wet Ingredients: In a large mixing bowl, whisk together the brown sugar, honey (or maple syrup), vegetable oil, eggs, and vanilla extract until well combined.

        Combine Oat Mixture: Add the soaked oats to the wet ingredients and stir until mixed well.

          Sift Dry Ingredients: In another bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Do not over mix.

            Add Mix-ins: Fold in the chopped nuts and raisins or chocolate chips if using. This adds a delightful texture and flavor.

              Fill Cupcake Liners: Using a spoon or an ice cream scoop, fill the cupcake liners about 3/4 full with the batter.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
