Old-Fashioned Amish Beef and Potato Casserole

2 lbs ground beef

6 medium potatoes, peeled and thinly sliced

1 medium onion, diced

2 cups shredded cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1 cup milk

1 cup beef broth

2 tsp garlic powder

1 tsp salt

½ tsp black pepper

1 tsp dried thyme

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the ground beef, breaking it apart with a spatula, and cook until browned (about 6-8 minutes). Drain excess fat.

      Season the Beef: Stir in the garlic powder, salt, pepper, and dried thyme. Remove from heat and set aside.

        Prepare the Casserole Layering: In a large mixing bowl, combine the cream of mushroom soup, milk, and beef broth. Mix well until smooth.

          Layer Ingredients: In a 9x13 inch baking dish, layer half of the sliced potatoes on the bottom. Pour half of the soup mixture over the potatoes. Next, spread the cooked beef evenly on top of the soup mixture.

            Add More Layers: Layer the remaining sliced potatoes over the beef, then pour the rest of the soup mixture on top. Finish by sprinkling the shredded cheddar cheese evenly over the entire casserole.

              Cover and Bake: Cover the casserole with aluminum foil and bake in the preheated oven for about 1 hour.

                Uncover and Brown: After 1 hour, remove the foil and bake for an additional 20-30 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.

                  Serve: Once done, let the casserole sit for about 10 minutes before serving. Garnish with freshly chopped parsley for a burst of color and freshness.
