2 boneless, skinless chicken breasts, sliced into thin strips

8 oz fettuccine pasta

4 tbsp olive oil, divided

3 cloves garlic, minced

1/2 tsp red pepper flakes (adjust to taste)

1/2 cup white wine (such as Sauvignon Blanc)

1 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tbsp fresh lemon juice

Salt and pepper to taste

Fresh parsley, chopped for garnish

Lemon wedges for serving

Instructions
 

Cook the Fettuccine:

    - In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

      Sauté the Chicken:

        - In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the sliced chicken strips, seasoning them with salt and pepper. Cook for about 5-7 minutes, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

          Create the Scampi Sauce:

            - In the same skillet, add the remaining 2 tablespoons of olive oil and the minced garlic. Sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.

              - Add the red pepper flakes and cook for an additional 30 seconds.

                - Pour in the white wine, scraping the bottom of the skillet to deglaze, and allow it to simmer for 2-3 minutes, reducing slightly.

                  Add Broth and Cream:

                    - Stir in the chicken broth and heavy cream, bringing the mixture to a gentle simmer. Cook for about 3-4 minutes until it thickens slightly.

                      Combine Everything:

                        - Add the cooked chicken back to the skillet along with the fettuccine. Toss everything together, adding in the reserved pasta water as needed to reach your desired consistency.

                          - Stir in the grated Parmesan cheese and fresh lemon juice, mixing until the cheese has melted and the pasta is well-coated in the sauce. Taste and adjust seasoning with more salt and pepper if necessary.

                            Garnish and Serve:
