Ingredients

4 boneless, skinless chicken thighs

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

1 cup baby carrots

1 cup green beans, trimmed

1 red bell pepper, sliced

1 medium zucchini, sliced

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, onion powder, paprika, salt, and pepper until well combined.

Marinate the Chicken: Place the chicken thighs in a large resealable bag or a mixing bowl. Pour the honey mustard marinade over the chicken, making sure each piece is well-coated. Let it marinate for at least 15 minutes (or up to an hour if you have time).

Prepare the Veggies: While the chicken is marinating, prepare your vegetables. In a large mixing bowl, toss together the baby carrots, green beans, bell pepper, and zucchini with a drizzle of olive oil, salt, and pepper.

Combine in One Pan: Spread the marinated chicken thighs in the center of a large baking sheet or oven-safe skillet. Arrange the vegetables around the chicken, ensuring they're evenly distributed.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.

Broil for Extra Flavor (Optional): For an extra caramelized flavor, you can turn on the broil for the last 2-3 minutes. Just keep an eye on it to prevent burning.

Serve: Remove from the oven and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.

Enjoy: Serve hot and enjoy the delightful combination of sweet and tangy flavors in this hearty, wholesome dish!
