One-Pot Cajun Shrimp and Sausage Pasta

8 oz (225 g) penne pasta

1 lb (450 g) shrimp, deveined and shelled

8 oz (225 g) smoked sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 cups chicken broth

1 can (14.5 oz) diced tomatoes with green chilies, undrained

2 tablespoons Cajun seasoning

1 teaspoon dried oregano

1 teaspoon paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated parmesan cheese (optional)

Instructions
 

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and sauté for about 5 minutes, or until it starts to brown. Remove the sausage from the pot and set aside.

    Cook the Vegetables: In the same pot, add the diced onion, garlic, and both bell peppers. Sauté for about 4-5 minutes until they begin to soften and the onion becomes translucent.

      Combine Ingredients: Stir in the Cajun seasoning, dried oregano, and paprika, cooking for an additional minute until fragrant. Then, add the chicken broth, diced tomatoes (with their juices), and bring the mixture to a boil.

        Add Pasta and Sausage: Once boiling, stir in the penne pasta and the sautéed sausage. Reduce the heat to a simmer, cover the pot, and let it cook for about 15 minutes, stirring occasionally, until the pasta is al dente and the liquid has been mostly absorbed.

          Cook the Shrimp: Add the shrimp to the pot during the last 3-4 minutes of cooking. Stir gently until the shrimp turn pink and opaque.

            Season and Serve: Season with salt and pepper to taste. Once done, remove from heat and let it sit for a few minutes to thicken. Garnish with chopped parsley and additional parmesan cheese if desired. Serve warm and enjoy!
