12 oz spaghetti

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (14 oz) diced tomatoes with green chilies

3 cups chicken or vegetable broth

1 cup corn (fresh, frozen, or canned)

1 can (15 oz) black beans, rinsed and drained

1 cup shredded cheese (cheddar or Mexican blend)

2 tbsp olive oil

Salt and pepper to taste

Fresh cilantro, for garnish

Avocado slices, for serving (optional)

Sour cream, for serving (optional)

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic, cooking for an additional minute until fragrant.
