Ingredients

2 cups all-purpose flour

½ cup granulated sugar

¼ cup poppy seeds

1 tablespoon baking powder

½ teaspoon salt

1 cup buttermilk

½ cup vegetable oil

2 large eggs

Zest of 1 large orange

1 teaspoon pure vanilla extract

Optional: additional sugar for sprinkling on top

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a standard muffin pan with paper liners or lightly grease each muffin cup.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, poppy seeds, baking powder, and salt until well combined.

Mix Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil, eggs, orange zest, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry mixture. Gently fold the batter together using a spatula until just combined. Be careful not to overmix; a few lumps are perfectly acceptable.

Fill Muffin Pan: Divide the batter evenly among the muffin cups, filling each about two-thirds full. If desired, sprinkle a little granulated sugar on top of each muffin for a crunchy finish.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Serve: These muffins are delightful served warm, but they are also great at room temperature. Enjoy with a pat of butter or a drizzle of honey, if desired!
