Ingredients

For the Oreo Crust:

24 Oreo cookies, crushed

5 tablespoons unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

3/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup creamy peanut butter

3 large eggs

1 cup sour cream

For the Topping:

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

10 small peanut butter cups, chopped (for garnish)

Additional crushed Oreos (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C).

Make the Crust: In a mixing bowl, combine the crushed Oreo cookies and melted butter until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake the crust for 10 minutes, then remove and let it cool while you prepare the filling.

Prepare the Filling: In a large mixing bowl, beat the softened cream cheese until creamy and smooth, about 2-3 minutes. Gradually add the granulated sugar and continue to beat until well incorporated. Mix in the vanilla extract and creamy peanut butter until smooth.

Add Eggs: Add the eggs one at a time, mixing well after each addition. Be careful not to over-mix. Finally, stir in the sour cream until just combined.

Combine Cheesecake and Crust: Pour the cheesecake filling over the cooled Oreo crust and use a spatula to smooth the top. Tap the pan gently on the counter to release any air bubbles.

Bake the Cheesecake: Place the springform pan on a baking sheet and bake in the preheated oven for about 50-60 minutes, or until the edges are set, but the center still has a slight jiggle. Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour before removing it.

Chill the Cheesecake: Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to let it set properly.

Make the Whipped Topping: In a medium bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.

Assemble the Cheesecake: Once the cheesecake is set, remove it from the springform pan. Spread the whipped topping evenly over the surface and decorate with the chopped peanut butter cups and additional crushed Oreos.

Serve: Slice into pieces and enjoy the decadence of your Oreo Peanut Butter Cup Cheesecake!
