Chicken drumsticks are one of the most popular cuts of chicken, and for good reason. Not only are they economical, but they also pack a punch in terms of flavor and tenderness. Unlike chicken breasts, which can sometimes be dry if overcooked, drumsticks are dark meat, ensuring a juicier bite. This cut of chicken is rich in flavor and has a higher fat content, which contributes to its moistness and ability to absorb marinades and spices beautifully.

Ingredients

2 lbs chicken drumsticks

1 cup BBQ sauce (your favorite brand or homemade)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon apple cider vinegar (for a tangy kick)

Fresh herbs for garnish (like cilantro or parsley)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top.

Prepare the Marinade: In a medium bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, black pepper, and apple cider vinegar. This will serve as your flavorful marinade.

Marinate the Drumsticks: Pat the chicken drumsticks dry with paper towels. This will help the skin get crispy. Place the drumsticks in a large bowl or a zip-top bag and pour the marinade over them. Toss to coat thoroughly. Let the chicken marinate for at least 30 minutes (or up to 2 hours for deeper flavor) in the refrigerator.

Bake the Drumsticks: Arrange the marinated drumsticks on the wire rack on the prepared baking sheet, leaving space in between each piece for airflow. Bake in the preheated oven for 25 minutes.

Glaze with BBQ Sauce: After 25 minutes, remove the drumsticks from the oven. Brush a generous amount of BBQ sauce over each drumstick. Return to the oven and bake for an additional 10-15 minutes, until the chicken is cooked through, and the internal temperature reaches 165°F (74°C) or until the skin is crispy and caramelized.

Final Glaze & Rest: For extra stickiness, brush the chicken with another layer of BBQ sauce and put it back in the oven for 5 minutes. Remove from the oven and let the drumsticks rest for about 5 minutes before serving.

Serve: Garnish with freshly chopped herbs and serve with extra BBQ sauce on the side. Enjoy with sides like coleslaw, cornbread, or steamed vegetables!
