1 lb ground beef

1 cup long-grain rice

1 large onion, finely chopped

3 cloves garlic, minced

2 tablespoons sweet paprika

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt (or to taste)

½ teaspoon black pepper

2 cups beef broth

1 cup diced tomatoes (canned or fresh)

1 bell pepper, diced (any color)

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Heat the Pan: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it softens.

    Cook the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it into smaller pieces with a spatula, about 5-7 minutes. Drain excess fat if necessary.

      Add Aromatics: Stir in the minced garlic, sweet and smoked paprika, oregano, salt, and pepper. Cook for another minute until fragrant.

        Incorporate Veggies: Add the bell pepper and cook until it has softened slightly, about 2-3 minutes.

          Combine Rice and Liquids: Stir in the rice until it is coated with the beef mixture. Then add the diced tomatoes and beef broth. Bring the mixture to a boil.

            Simmer: Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

              Finish and Serve: Once cooked, fluff the rice with a fork. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
