Ingredients

4 bone-in or boneless pork chops (1-inch thick)

1 cup freshly grated Parmesan cheese

1 cup seasoned breadcrumbs (preferably panko)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, thyme, basil)

Salt and pepper, to taste

2 large eggs

2 tablespoons Dijon mustard

1/4 cup all-purpose flour

2 tablespoons olive oil

1 tablespoon butter (for finishing)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Breading Stations: In one shallow dish, mix together the all-purpose flour with a pinch of salt and pepper. In a second bowl, whisk together the eggs and Dijon mustard until smooth. In a third bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.

      Coat the Pork Chops:

        - Dredge each pork chop in the flour, ensuring it’s coated evenly and shaking off any excess.

          - Next, dip the floured chop into the egg mixture, coating it completely.

            - Finally, press the chop into the breadcrumb and Parmesan mixture, making sure it’s thoroughly coated. Repeat for all chops.

Sear the Chops: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for 4-5 minutes on each side, until golden brown.

Finish in the Oven: After searing, add the butter to the skillet and transfer it to the preheated oven. Bake the pork chops for an additional 10-12 minutes, or until the internal temperature reaches 145°F (63°C).

Rest and Serve: Once cooked, remove the chops from the oven and let them rest for about 5 minutes. This allows the juices to redistribute. Serve with your choice of sides, like roasted vegetables or a fresh salad.
