Ingredients

1 package (9 oz) refrigerated cheese tortellini

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1/4 teaspoon black pepper

Salt, to taste

2 large eggs

Oil, for frying (canola or vegetable oil)

Fresh parsley, chopped (for garnish)

Marinara sauce (for serving)

Instructions

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the refrigerated tortellini and cook according to package instructions until al dente. Drain and set aside to cool for about 10 minutes.

Prepare the Breading Station: In one shallow bowl, beat the eggs until well blended. In another shallow bowl, combine the breadcrumbs, grated Parmesan, garlic powder, oregano, black pepper, and a pinch of salt. Mix well until the dry ingredients are evenly distributed.

Bread the Tortellini: Once the tortellini have cooled, dip each piece into the beaten eggs, allowing any excess to drip off. Then, coat them generously in the breadcrumb mixture, pressing lightly to ensure the coating sticks. Place the breaded tortellini on a plate or baking sheet.

Heat the Oil: In a large skillet, pour oil to a depth of about 1 inch. Heat over medium heat until hot (around 350°F or 180°C).

Fry the Tortellini: Carefully add the breaded tortellini in batches to the hot oil, taking care not to overcrowd the pan. Fry for about 3-4 minutes, turning occasionally with a slotted spoon, until they are golden brown and crispy.

Drain: Use a slotted spoon to transfer the fried tortellini to a paper towel-lined plate to drain any excess oil.

Garnish and Serve: Once all the tortellini have been fried, transfer them to a serving platter. Sprinkle with fresh chopped parsley for a pop of color. Serve with warm marinara sauce for dipping.
