Peach Raspberry Oat Squares

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup unsalted butter, melted

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup fresh peaches, diced

1 cup raspberries (fresh or frozen)

1 tablespoon lemon juice

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish or line it with parchment paper for easy removal.

    Prepare the Oat Base: In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, salt, and cinnamon. Mix well.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, honey (or maple syrup), and vanilla extract until blended.

        Form the Crust: Pour the wet ingredients into the dry ingredients and mix until everything is just combined. Press about two-thirds of this mixture evenly into the bottom of the prepared baking dish to form the base.

          Prepare the Fruit Filling: In a medium bowl, toss the diced peaches, raspberries, and lemon juice together gently to coat the fruit. Spread this mixture evenly over the pressed oat base in the baking dish.

            Add the Crumb Topping: Sprinkle the remaining oat mixture evenly over the fruit filling. Make sure it covers the fruits well for a nice crumb layer on top.

              Bake: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the top is golden brown and the fruit is bubbly.

                Cool Down: Once done, remove from the oven and allow to cool in the dish for about 10 to 15 minutes. Then, lift the squares out using the parchment paper (if using) and let them cool completely on a wire rack.
