Ingredients

2 ripe bananas, mashed

1 cup creamy peanut butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (walnuts or almonds, optional)

1/4 cup dried fruits (like cranberries or raisins, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Mix until everything is well combined and smooth.

Combine Dry Ingredients: In another bowl, mix together the rolled oats, cinnamon, and salt. Make sure the dry ingredients are evenly distributed.

Combine Wet and Dry Mixtures: Gradually fold the dry ingredients into the wet mixture. Stir until everything is well combined. If using, gently fold in the chocolate chips, chopped nuts, and dried fruits at this stage.

Spread the Mixture: Pour the mixture into the prepared baking dish. Use a spatula to spread it out evenly and press down firmly to pack it tightly.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the edges start to turn golden brown.

Cool and Cut: Once baked, remove the dish from the oven and let it cool in the pan for about 10 minutes. Using the parchment paper edges, lift the bars out of the pan and place them on a wire rack to cool completely. Once cooled, cut into bars.

Store: Enjoy immediately or store bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
